Shuzo yosui (sake brewing water)
酒造用水しゅぞうようすいShuzo yosui (brewing water) refers to all the water used in the sake-making process. It includes the water used for fermentation and brewing, as well as the water used at the bottling stage. Because the quality and mineral content of the water have a significant effect on the taste and aroma of sake, different regions may choose different water sources. In general, soft water is considered better suited to sake production than hard water. For this reason, good-quality brewing water is regarded as a very important element of sake making.
