Storage period (chozo nensu)
貯蔵年数ちょぞうねんすうStorage period (chozo nensu) refers to the length of time from when sake is placed in a storage container until it is shipped. This period is based on the Standards for Labeling of Manufacturing Methods and Quality (製法品質表示基準), and is calculated from the day after storage begins to the day storage ends. Where the storage period is less than one year, the fractional part is discarded when the number of years is displayed. In general, sake with a longer storage period is said to have a mellower character and a deeper flavor. Because the ideal time to drink it and its characteristics also differ, the storage period serves as an important guide when buying or enjoying sake.
