Chozo (storage and maturation of sake)

貯蔵ちょぞう
Chozo (storage) refers to the process of resting sake for a set period after pasteurization so that its flavor and aroma can mature. During this time, the sake becomes mellower in taste and aroma, and its overall balance comes together. Maturation generally takes place in tanks, but some breweries also keep the sake at low temperatures after bottling, known as bottle storage. This kind of storage is expected to further improve the quality of the sake and deepen its distinctive character.
