Tokubetsu Honjozo

特別本醸造酒とくべつほんじょうぞうしゅ
Tokubetsu Honjozo is a type of sake brewed from polished rice with a rice polishing ratio of 60% or less, rice koji, water, and brewer's alcohol. It is characterized by particularly fine flavor and aroma and appearance (color and clarity). For Tokubetsu Honjozo, the amount of brewer's alcohol used must not exceed 10% of the weight of the polished rice. This allows the character of the rice to come through, while the alcohol helps bring out the aroma, resulting in a well-balanced taste. It is one of the Tokutei Meishoshu (special designation sakes), and because it meets special standards in both production method and ingredients, it is of high quality and may receive a higher evaluation than other Honjozo sake.
