Vaporization (kika)
気化きかVaporization (kika) refers to the phenomenon in which a liquid turns into a gas under conditions of high temperature or low pressure. In sake, for example, when heat is applied during brewing, components of the liquid can evaporate, changing the aroma and flavor. Vaporization also matters when enjoying sake: when it is poured into a glass, aroma compounds vaporize and rise from the surface, which contributes to a fuller taste. Because the aroma and flavor of many sake change with temperature and condition, drinking with vaporization in mind can lead to a deeper tasting experience.
