Vodka
ウオッカうおっかVodka is a high-alcohol beverage made mainly from corn or wheat, and sometimes from potatoes. It is widely produced in countries such as the former Soviet Union, Poland, and the United States. Under Japan's Liquor Tax Act, vodka is classified as a spirit, which places it in a different category from sake (seishu).
In the production process, the raw materials are first steamed and cooked, then malt is added for saccharification. The saccharified liquid is then fermented and distilled in a continuous still. After distillation, the vodka is diluted with water to adjust the alcohol content to 40 to 60 percent, and it is characteristically refined by filtering through birch charcoal. This refinement gives vodka a clear, smooth mouthfeel.
