Water purification
水の浄化みずのじょうかWater purification is a very important process in sake brewing. The quality of the water used in brewing directly affects the taste and aroma of the sake, so it is essential to secure clean water. Purification methods include replacing or renewing the well (idogae), sand filtration, aeration, filtration and adsorption, coagulation, and ion-exchange resin treatment. Each method can remove impurities and microorganisms. Clean water in particular improves the quality of the sake and provides an environment well suited to fermentation. Many sake breweries in Japan carefully select natural water and, as needed, combine these purification techniques.
