Zenkan kokan-gata (a moromi fermentation pattern)

前緩後緩型ぜんかんこうかんがた
"Zenkan kokan-gata" (前緩後緩型) is one of the fermentation patterns of moromi (fermentation mash) in sake brewing. This pattern is characterized by a gradual rise in temperature during the early stage of fermentation, followed by rapid progress from the middle to the late stage. Specifically, the temperature rise in the first half is modest and alcohol production is relatively low, so fermentation proceeds gently. In the second half, fermentation advances rapidly, which can give the sake greater depth of flavor. This type of fermentation pattern can be an important factor in bringing out particular aromas and flavors.
