50 breweries, 132 brands, 185 bottles

Kyoto Prefecture is home to sake breweries that have supported Japan's sake culture, drawing on the famous waters of Fushimi.

Sake breweries in Kyoto Prefecture are said to produce many sakes with a soft, refined character, drawing on the high-quality groundwater of Fushimi. Brewing culture was polished over the long history of the imperial capital, and brands with sophisticated flavors have grown out of it.

Sake of Kyoto

Of the nearly 50 breweries in Kyoto Prefecture, about half are concentrated in the Fushimi district, a renowned sake-brewing area. Blessed with clear, pure subterranean water, Fushimi has a brewing history of 400 years. Its sake is characterized by a moist, soft texture, and is called "onna-zake" (feminine sake), in contrast to the "otoko-zake" (masculine sake) of Nada. With the revival of Iwai, a sake rice grown in Kyoto, breweries in recent years have each been pursuing sake brewing with its own individual character.
