In Okinawa, awamori culture is dominant, but there are also sake breweries taking on the challenge of making Japanese sake (nihonshu). In keeping with regional tastes and food culture, efforts can be seen to create sake that is mild in flavor and aroma and easy to drink.
Sake of Okinawa
Okinawa Prefecture is strongly associated with awamori when it comes to alcohol, yet one sake brewery in Uruma (うるま市) makes Japanese sake. After trial and error, including installing cooling equipment and having rice grown outside the prefecture polished in Kyushu, the brewery succeeded in creating a suitable brewing environment. Because production is small, this is a southern-island sake that is rarely seen on the Japanese mainland (Honshu).
