About
Yamahai brewing (yamahai-zukuri, a traditional yeast-starter method) adds no lactic acid. Instead, naturally occurring lactic acid bacteria create an environment free of harmful bacteria while nurturing the yeast. A gentle aroma spreads, and the sake has the umami and clean finish characteristic of yamahai. It also has a touch of acidity. As an extra-dry sake that does not tire the palate, it can be enjoyed chilled or warmed (kan).
