Flavor profile Jun-shu
Jun-shu — rich and umami-driven
The 46% alcohol and one year of tank aging for mellowness point to a restrained, full-bodied rice-based profile. The low acidity of 1.0 suggests a softer, slightly sweet impression rather than an aromatic one.

About
Niigata Prefecture was once known as Echigo Province (Echigo no kuni). Surrounded by beautiful mountains, this land has hot summers and harsh winters, with severe cold and snow falling incessantly, a demanding region. The samurai of Echigo were rugged and sturdy, reticent warriors who quietly carried out what needed to be done. This sake expresses the Echigo samurai, who let their deeds speak rather than their words (fugen jikko). It is a liqueur made from rice, brewed in the manner of sake. After production, the liqueur is matured mellow in tanks for one year before shipment.
