About
Okinawa, Japan's southernmost prefecture, has an average annual temperature of around 20 °C, so brewing sake there requires creating autumn-to-winter conditions artificially. After much trial and error with brewing vessels, storage tanks and other equipment, the brewery succeeded in keeping the sake at 15 °C, which resulted in this dry, firm, full-bodied honjozo. It can be enjoyed chilled or warmed (kan), according to your preference.
