The junmai ginjo designation and low-temperature long fermentation point to a moderately fruity aroma. SMV +5 suggests a dry, light palate with a slightly lighter body than rich junmai styles.

About

As part of a village revitalization project, the Sanjunin-shu group (Sanjunin-shu, a group of thirty people) made this sake. Each member brought rice grown at their own home, and the rice was pooled for brewing. Members also carry out the brewing and bottling work themselves. The sake is fermented slowly at low temperature over a long period, and bottling begins in mid-February.
