Juku-shu — aromatic and full-bodied, including aged sake
The fruity aroma described in the text and the 40% polishing of this junmai daiginjo point to a high aroma. The rich, koku-forward description with a soft acidity of 1.4 places it toward the mature, full-bodied juku side, while SMV +1 and low acidity give a mildly sweet impression.

About
Made with 100% Yamada Nishiki, the top-grade sake rice grown in Hyogo Prefecture. This soft-textured sake draws out the umami of the rice through low-temperature fermentation. Its gentle, fruit-like aroma and easy drinkability give way to a bright, lively umami that spreads across the palate. Brewed with great care and exceptional skill, using the abundant underground spring water of the Hadano Basin, known as “the village of famous waters,” and carefully selected rice, this premium sake was slowly matured in the blessed natural surroundings of the Tanzawa Mountains. Following the traditional “dento tezukuri” (traditional handmade) method, the selected rice is polished to a rice polishing ratio of 50% or less, and brewed through low-temperature fermentation to preserve the natural flavor of the rice. We invite you to savor this fine sake, which is rich and full-bodied (nojun) with depth (koku) and a mellow, refined elegance. May it be a small help to your health tomorrow.
