Flavor profile Jun-shu
Jun-shu — rich and umami-driven
Yamada Nishiki milled to 65% in a junmai style points to a restrained aroma. The low SMV of 1 to 2 and the described smooth sweetness and umami suggest a mildly sweet, medium-full body.

About
Shiraito Shuzo is located in Itoshima in the western part of Fukuoka Prefecture. It is also known as a brewery surrounded by rice paddies of Yamada Nishiki, which is regarded as the finest of all sake rice. Tanakarokujugo Junmai sake is made with time and care, and it is pressed using hanegi-shibori, a traditional method that is rarely used anywhere in Japan. This process draws out a deep and complex flavor. Its light sweetness and umami make it a rare treat that cannot be found elsewhere.
