Flavor profile Kun-shu
Kun-shu — aromatic and light
The aroma of green ume is prominent, and the sugar-free, dry 'kiritto karakuchi' style with a clean junmai base points to a light, fragrant profile. This places it in the kun (aromatic and light) quadrant.

About
Named after Tomiyama, an area along the upper reaches of the Shimanto River known for its abundant plum cultivation, this sake is made with junmai sake and green (unripe) plums. Rather than a conventional plum liquor (umeshu), it is crafted as a plum-based sake, allowing you to enjoy the harmony between the fragrance of plum and the clean character of junmai sake. "Kiritto Karakuchi" uses no sugar of any kind.
Available from autumn through spring as a limited-time release.
