The 35% polished Yamada Nishiki, SMV +3 and 17% genshu specs, together with the description of a vivid ginjo aroma and a light, sharp finish, point to a fragrant, lightly dry profile. The genshu strength adds depth, so body sits just below neutral and the quadrant is kun.

About

Brewed with Yamada Nishiki, the king of sake rice, polished to 35%, and local crisp water. Brewed during the winter cold (kanjikomi) in a fortunate location in Kyushu where winter temperatures drop below freezing, this Daiginjo genshu (undiluted) offers a fragrant ginjo aroma and a Tanrei (light, clean) smoothness on the palate. This sake won the gold medal, the highest honor, at the 2022 (Reiwa 4) Annual Japan Sake Awards. Since the Heisei era, the brewery has won 19 gold medals, the most award placements in Kyushu, and is counted among the top breweries nationwide. The Yatsushika brand has come to be valued by many as a premium sake. This Daiginjo, an entry rarely seen on the market as a competition sake, is offered here as a special limited release. Enjoy its fragrant aroma, deep and luxurious flavor, and clean finish (kire).
