About
Ofuku Shuzo is a sake brewery in Nagaoka, Niigata Prefecture, founded in 1897 (Meiji 30) as Kishi Goro Shoten. Its founder, Kishi Goro, was involved in the origins of sokujo-moto, a yeast starter method in which lactic acid is added to the shubo (yeast starter), and the brewery has used sokujo-moto consistently. Filtration is kept to a minimum, and the brewery values a sake style that retains a pleasant sweetness. It also produces Ofukumasamune Yamakoshi Junmai Ginjo, made with 100% rice grown under contract in the terraced rice fields of Yamakoshi. The flagship brand is Ofukumasamune, which has won awards at competitions including the Annual Japan Sake Awards and the KAN SAKE AWARD.
