Ethyl alcohol (ethanol)

エチルアルコールえちるあるこーる
Ethyl alcohol is an alcohol with the chemical formula C2H5OH and is the principal component of many alcoholic beverages, including sake. It is produced when yeast ferments fermentable sugars, such as those from grapes or rice. Commonly known as ethanol, it has a boiling point of 78.3°C. The alcohol content of sake is determined by the amount of ethyl alcohol it contains, and this contributes to the variety of flavors and aromas that sake offers consumers. In sake brewing, managing the production of ethyl alcohol appropriately is very important for achieving a balance of taste and aroma.
