Alcohol yield ratio (Arukoru shutoku buai)
アルコール収得歩合あるこーるしゅうとくぶあいAlcohol yield ratio (arukoru shutoku buai) is an indicator of the proportion of pure alcohol contained in the sake produced from a given amount of raw material, mainly polished rice. Specifically, it expresses the number of liters of pure alcohol obtained when 100 kg of polished rice is used, and it forms one component of the sake conversion rate (shuka-ritsu). This indicator helps evaluate brewing efficiency and is important data for quality control in sake making and for understanding how efficiently raw materials are used. The higher the alcohol yield ratio, the more pure alcohol can be obtained from the raw materials, so it can be said to reflect the results of the brewing technique and the fermentation process.
