Bacteria (saikin)

細菌さいきん
Bacteria are single-celled microorganisms, extremely small living organisms that can be observed under a microscope. They multiply mainly by cell division and live widely in a variety of environments. In sake production, bacteria are a factor that can influence fermentation. In particular, certain bacteria can help form desirable flavors during the brewing process and improve the quality of the sake. However, if undesirable bacteria proliferate, they may spoil the flavor or lower the quality, so managing bacteria is important in brewing.
