Brewed alcoholic beverages (Jozoshu)

醸造酒じょうぞうしゅ
Brewed alcoholic beverages (jozoshu) are a general category of alcoholic drinks made by fermenting raw materials. They are made mainly from grains such as rice and barley, or from fruits such as grapes, and the alcohol is produced by the action of yeast. Sake (seishu), beer, and wine all fall into this category. These drinks have aromas and flavors that come from fermentation, and they are enjoyed in ways closely tied to culture and food. Brewed beverages take many different styles depending on the raw materials and production methods, and they reflect the characteristics of the regions where they are made.
