Coconut shell charcoal (Yashigara tan)

ヤシガラ炭やしがらたん
Coconut shell charcoal (yashigara tan) is a granular charcoal made from coconut shells. In sake production, it is often used in sake brewery storage rooms and fermentation tanks for cleaning, deodorizing, and humidity control. Compared with other types of charcoal, coconut shell charcoal is lightweight and has many fine pores, which gives it excellent adsorption properties. Because of this, it removes unwanted odors and impurities while preserving the character of the sake. It is one of the important materials that contribute to improving sake quality.
