Echigo Toji (Niigata master brewer guild)

越後杜氏えちごとうじ
Echigo Toji (越後杜氏) refers to the group of toji (master brewers) who originated in Niigata Prefecture and are engaged in brewing Japanese sake. Widely known as one of the three great toji guilds of Japan, they are highly regarded for their skill and tradition. Because the sake brewing process, including rice selection, rice polishing, and fermentation management, demands particular care and precision, brewing techniques have been passed down through the generations. The climate and clean water unique to the region give the sake brewed by Echigo Toji a distinctive character, and many nationally famous brands exist as a result. For this reason, Echigo Toji are regarded as an important pillar supporting the sake culture of Niigata Prefecture.
