Futsu jozo ho (ordinary brewing method)
普通醸造法ふつうじょうぞうほうFutsu jozo ho (the ordinary brewing method) is a way of brewing sake that uses rice, rice koji, and water, together with brewer's alcohol, organic acids (succinic acid, lactic acid, citric acid, and malic acid), and sake lees (sake kasu). Because alcohol is added during the brewing process, this method allows sake to be produced at lower cost, and much of the sake in general circulation is made this way. The addition of alcohol can give the sake distinctive characteristics in flavor and aroma, and it offers a taste that differs from that of Junmai sake.
