Futsushu (ordinary sake)

普通酒ふつうしゅ
Futsushu (ordinary sake) refers to sake that does not fall into the Tokutei Meisho-shu (special designation sake) categories. Special designation sake, such as Ginjo, Junmai and Honjozo, is subject to strict standards for quality and production methods, but these standards do not apply to futsushu. Specifically, futsushu may use additional ingredients such as brewer's alcohol, sugars and acidulants. The conditions for production methods and quality are relatively relaxed for futsushu, and there are no restrictions on the grade of the rice used or on the rice polishing ratio. As a result, futsushu comes in a wide range of styles and flavors, and some are of high quality and very enjoyable. Some breweries also make fine futsushu, but because there are no specific regulations governing labels such as Josen and Kasen, the criteria for judging quality vary according to each brewery's policy and style. Futsushu is widely enjoyed as an everyday sake.
