Genkei seimai (original-form rice polishing)

原形精米げんけいせいまい
Genkei seimai (original-form rice polishing) is a method of milling in which only the outer layers of brown rice are removed, keeping the original shape of each grain as much as possible. The aim is to strip away the outer skin and bran while retaining the germ and nutrients at the center of the grain. Because sake brewing places great importance on the quality of its rice, genkei seimai is regarded as playing a significant role in shaping flavor and aroma. This process is said to bring out the character of the sake and help achieve a better taste.
