Gin no Yume
吟の夢ぎんのゆめGin no Yume is a sake rice developed in Kochi Prefecture, bred from Yamada Nishiki as the mother and Hinohikari as the father. First released in 1998 (Heisei 10), it is well suited to the climate and natural environment of Tosa and is particularly strong in its suitability for sake brewing. Its quality is comparable to that of Yamada Nishiki, often called the king of sake rice, and it is well suited to brewing premium sake such as Ginjo. In recent years, many breweries have used this rice to make sake that brings out its distinctive flavor and aroma.
