Jun Arukoru Tare Buai (Pure Alcohol Drip Ratio)

純アルコール垂れ歩合じゅんあるこーるたれぶあい
The pure alcohol drip ratio (jun arukoru tare buai) indicates how much of the pure alcohol present in the moromi (fermentation mash) has been extracted as pure alcohol in the sake from the upper portion. This ratio is an important indicator for measuring the extraction efficiency of pure alcohol, and it is calculated using the following formula: Pure alcohol drip ratio (%) = (liters of pure alcohol in the sake - liters of pure alcohol in the raw material sake) ÷ liters of pure alcohol in the moromi before the upper layer × liters of pure alcohol in the raw material sake × 100 This calculation makes it possible to evaluate what proportion of the alcohol produced by fermentation in the moromi was ultimately converted into the final product. A high pure alcohol drip ratio indicates that alcohol is extracted efficiently from the moromi, which contributes to improved sake quality.
