Kashira (assistant to the toji)

Kashira (頭) is one of the key positions in the sake brewing staff hierarchy. It is found mainly at breweries, where the kashira works as an assistant to the toji (master brewer). The kashira oversees the entire brewing process and manages and directs the production floor. While learning the toji's techniques, the kashira instructs the kurabito (brewery workers) and plays an important role in making their work more efficient. In short, the kashira is the toji's right-hand man and an indispensable presence on the brewing floor.
