Kasui chosei (water adjustment)

加水調整かすいちょうせい
Kasui chosei (water adjustment) is the process of adding water to genshu (undiluted sake) in order to adjust its alcohol content and flavor, improving the quality and drinkability of the sake. This step is generally carried out at the final stage of the sake-making process. Adding water can lower the alcohol content to a target level and make the sake softer on the palate. The water used for this purpose should be especially clean and well balanced in minerals, and it is important that it be chosen carefully so that it does not affect the character of the sake.
