Kioke Shikomi
木桶仕込みきおけじこみKioke shikomi is a method of making sake in which fermentation takes place in wooden vats (oke). It is one of the traditional techniques, and the aroma and flavor of the wood transfer to the sake, creating a distinctive character. Wooden vats are highly breathable and encourage the activity of microorganisms, so they provide a natural environment during fermentation. They also respond flexibly to temperature changes, which helps achieve stable fermentation. In recent years the number of sake breweries that use wooden vats has declined, but sake made with this traditional method is characterized by deep flavor and rich aroma.
