Manganese

マンガンまんがん
Manganese is one of the elements that may be present in brewing water, and it is one of the factors that can affect the quality of sake. In particular, manganese can influence the color of sake and may promote discoloration caused by sunlight. In sake brewing, it is said that the lower the manganese concentration, the clearer and cleaner the taste of the resulting sake. For this reason, water sources free of manganese and appropriate water treatment are considered important in sake production.
