Motodate (starting the yeast starter)
酛立てもとだてMotodate is one of the key steps in making shubo (yeast starter) for sake. It refers to the initial work of mixing koji, steamed rice, and brewing water. Through this process the shubo takes shape and fermentation begins. The very first stage of motodate is known as "moto hajime" (酛はじめ), and it marks the start of sake brewing. Because motodate has a great influence on the fermentation that follows, it is considered a task that requires extremely careful attention.
