Nada no Miyamizu (Miyamizu water of Nada)
灘の宮水なだのみやみずNada no Miyamizu refers to the groundwater drawn in the Nada area, which spreads across Kobe and Nishinomiya in Hyogo Prefecture. The water originates on Mount Rokko and flows as subsurface water beneath rivers, so it is very pure. Nada no Miyamizu is rich in phosphorus and magnesium and contains extremely little iron, which makes it regarded as an ideal water for sake brewing. Natural filtration through granite strata also removes almost all impurities, keeping the water clear. In addition, because the area lies close to the sea, the water also contains a moderate amount of potassium. Because of these characteristics, sake made with Nada no Miyamizu is generally dry and known for a powerful, robust taste. For this reason, it is sometimes called "Nada no Otokozake" (Nada's "masculine sake").
