Onnazake ("women's sake")

Onnazake (女酒, literally "women's sake") refers to sweet sake favored by women. It is brewed mainly with soft water as the brewing water, and fermenting the moromi (fermentation mash) over a long period brings out a soft, rich flavor. Sake from the Fushimi area in particular is regarded as representative of onnazake. Onnazake is sweet yet easy to drink, and is especially popular as an aperitif or dessert sake.
