Shokuzenshu (aperitif)
食前酒しょくぜんしゅShokuzenshu (aperitif) refers to a drink taken before a meal, enjoyed mainly to stimulate the appetite. Aperitifs are often chosen for their high aroma and light, refreshing mouthfeel, and Western drinks such as sparkling wine and sherry are the typical examples. Among sake, aromatic kunshu-style sake (fragrant, aroma-focused sake) and refreshing soshu-style sake (light, crisp sake) are sometimes favored as aperitifs. An aperitif plays an important role both as a glass to enjoy the lingering atmosphere of the meal and as a choice made with food pairing in mind.
