Potassium pyrosulfite

ピロ亜硫酸カリウムぴろありゅうさんかりうむ
Potassium pyrosulfite is a type of potassium metabisulfite, used mainly as an antioxidant. In the food industry it plays an important role, particularly in sake production, where it may be used to prevent problems such as the formation of black lees (kurokasu). When it is used, the Food Sanitation Act requires that this be indicated on the label. Potassium pyrosulfite is regarded as an essential additive for preventing deterioration of flavor and aroma through oxidation and for maintaining product quality.
