Seishu buai (sake yield ratio)

清酒歩合せいしゅぶあい
Seishu buai (清酒歩合) is an indicator of the ratio of the volume of sake produced, in liters, to the weight of the polished rice used as a specific raw material. It is calculated on the basis of the amount of sake produced from 100 kg of polished rice: the amount of sake used as a raw material is subtracted from the amount of sake, the difference is divided by the weight of the polished rice, and the result is multiplied by 100 and expressed as a percentage. The more alcohol is added, the higher the seishu buai tends to be. Because it shows how efficiently sake is produced per unit weight when more sake is used as a raw material, it is an important indicator for evaluating the brewing process and the quality of sake.
