Shin MG staining method (新MG染色法)

新MG染色法しんえむじーせんしょくほう
The Shin MG staining method (Shin MG senshokuho) is a technique for evaluating the polishing condition of the rice used as the raw material for sake. In this method, rice is stained with a Shin MG staining solution, and the quality of the polishing and the skill with which it was carried out are assessed. With this method, changes appear in the appearance and internal structure of the rice grains, and these can be used to visually evaluate the rice variety and the degree of polishing. As a result, it allows more detailed quality control of rice in sake brewing.
