Soe (additional charge in brewing)

添そえ
Soe (添) refers to an additional charge of ingredients in the sake brewing process, made after the koji and yeast have first been added. This step serves to raise yeast activity and promote fermentation. Specifically, after the ingredients needed for the initial charge (hatsuzoe, 初添) have been added, further ingredients are added to support fermentation, with the aim of improving and stabilizing the quality of the sake. The soe charge (soe-jikomi, 添仕込み) is an especially important step for bringing out the umami and the depth of aroma in sake. The water and rice used at this stage, as well as the fermentation temperature, have a major influence on the final flavor and aroma.
