添桶そえおけSoeoke is a dedicated vessel used for soe-shikomi in sake production. Soe-shikomi is the step in which new rice and water are added to fermenting moromi (fermentation mash) to promote further fermentation. The soeoke plays an important role in mixing these ingredients efficiently and adjusting the state of fermentation. Soeoke typically differ in capacity and shape, and they are designed to be easy to handle. Cleanliness and durability are also required, so materials suited to sake brewing are used.
