Tobin (18-liter bottle)
斗瓶とびんTobin is a bottle generally large enough to hold one to (approximately 18 liters). At sake breweries it is often used during the joso stage (pressing the fermented mash) to store sake prepared for competitions and exhibitions (shuppinshu). Because a tobin allows sake to be kept for a long period while preserving its flavor and quality, it plays an important role in large-volume production. In traditional sake brewing as well, using a tobin makes it possible to bring out the full appeal of the sake.
