Uwadachi-ka (top note)
上立ち香うわだちかUwadachi-ka is the aroma perceived when a sake is brought close to the mouth or nose. It is an important element that highlights the character and flavor of a sake, and it is generally also called the "top note." If sake is poured into a vessel such as a kikichoko (sake tasting cup) and left to stand for a while, its volatile aroma compounds disperse into the air, and the way the aroma is perceived changes. For this reason, it is important to appreciate uwadachi-ka while the sake is fresh. By noticing the distinct uwadachi-ka of each sake brand, you can gain a deeper understanding of that sake's individuality and characteristics.
