wagama (Japanese-style cauldron)

和釜わがま
Wagama is a type of traditional steamer used mainly in the sake-making process. Known in particular as Sanshu-gama (三州釜), this vessel is used to steam rice and plays an important role in brewing sake (seishu). Wagama are usually made of iron, aluminum, or stainless steel, and each material has its own characteristics. For example, an iron wagama conducts heat well and allows stable temperature control, so the rice can be steamed evenly. Using a wagama is said to improve the preparation and aroma of the rice, contributing to better sake quality.
