Yosekiju (volume weight)

容積重ようせきじゅう
Yosekiju (volume weight) is a measure of the weight of a fixed volume of brown rice or rice, generally one liter. The higher the value, the more solid the rice grains are considered to be and the better their condition, which makes it an important indicator of rice quality. Because volume weight has a significant effect on the taste of the rice and on sake brewing, it is one of the indicators watched closely in sake production. Rice with a high volume weight often gives depth to the flavor and aroma of the sake, so it serves as an important benchmark for producing good-quality sake.
