Sake of Hokkaido

Sake nurtured by the clear air and snowmelt water of the northern land is made in a cold climate where maturation progresses slowly. As a result, it has low amino acid levels and a clean, light drinking character. In recent years, more sake has been made with local ingredients, such as the sake rice varieties Ginpu, Hatsushizuku, and Suisei and Hamanasu flower yeast, and these efforts are attracting attention.
