Sake of Okayama

Okayama is the birthplace of Omachi, the prefecture's signature sake rice, which is also called the "phantom sake rice" because of its small harvest. Blessed by this proud rice and by the region's three major rivers, the areas of Bitchu, Bizen, and Mimasaka are home to more than 50 breweries. Sake brewed by the Bitchu Toji (master brewers of the Bitchu school) is characterized by a light drinking feel, a refreshing aroma, and a rich, mellow umami flavor.
