In Yamaguchi, against the backdrop of the mild climate of the Seto Inland Sea, a diverse range of sake breweries carry on the craft of sake brewing.

Yamaguchi's sake breweries are characterized by the different climates and natural conditions of the Seto Inland Sea side and the Sea of Japan side, which give rise to a wide range of sake styles. Making use of differences in water systems and climate, breweries in the prefecture tend to focus on balance of flavor and aroma.

Sake of Yamaguchi

Sake breweries are scattered mainly along the coasts of the Seto Inland Sea and the Sea of Japan. Under the principle of local production for local consumption, the prefecture is working on regional sake brewing, including the revival of the sake rice Kokuryomiyako, the development of the new rice variety Saito no Shizuku, and the creation of Yamaguchi Sakura Yeast. Many breweries are full of originality, such as sake with a distinctive character made from rice grown in the prefecture.
